Muscle-specific color stability in fresh beef from grain-finished Bos indicus cattle

Abstract: Objective To investigate the color and oxidative stabilities of longissimus lumborum (LL) and psoas major (PM) muscles from grain-finished Bos indicus cattle in Brazil.
