Multivariate optimization of a synergistic blend of oleoresin sage (Salvia officinalis L.) and ascorbyl palmitate to stabilize sunflower oil

Abstract: The simultaneous optimization of a synergistic blend of oleoresin sage (SAG) and ascorbyl palmitate (AP) in sunflower oil (SO) was performed using central composite and rotatable design coupled with principal component analysis (PCA) and response surface methodology (RSM). The physicochemical parameters viz., peroxide value, anisidine value, free fatty acids, induction period, total polar matter, antioxidant capacity and conjugated diene value were considered as response variables. PCA reduced the original set… Show more

“…Besides oxygen scavenging activity of AP, its antioxidant activity depends on hydrogen donation to regenerate the stable antioxidant radical; metal inactivation to reduce the rate of initiation by metals and hydroperoxide reduction to produce stable alcohols by nonradical processes (Frankel, ). Antioxidant effectiveness of natural extracts with AP in SFO was examined in some researches (Upadhyay & Mishra, ; Upadhyay et al, ). In these studies, the synergistic effect of sage or rosemary extracts with AP in SFO was found concentration‐dependent.…”

“…It was reported that AP had synergist effects with α‐tocopherol during butter oil triacylglycerol (TAG) oxidation (Karabulut, ). On the other hand, synergism was observed for AP with some herbs (Beddows et al, ; Upadhyay & Mishra, ; Upadhyay, Sehwag, & Niwas Mishra, ) and olive mill waste extracts (Lafka et al, ) under Rancimat test conditions.…”

“…Among natural antioxidants, the spices and herbal extracts, tocopherols, ascorbic acid, citric acid, and carotenoids are widely covered. It is commercially available in the market in different formulations such as oleoresin, seasoning, and flavoring agent (Upadhyay & Mishra, 2016). Natural antioxidants are effective in thermo-oxidative stabilization of fats and oils (Jaswir, Che Man, & Kitts, 2000).…”
