Abstract: This research aimed to optimize the processing conditions to obtain ready‐to‐eat extruded snacks with a high fiber content from mixtures of pineapple byproduct powder (PBP) and nixtamalized maize flour (PBP‐NMF) or maize flour (PBP‐MF).
