Background: Probiotics are instrumental in maintaining the equilibrium of the gut microbiota and improving the health of the human body. This study examined the presence and physiological features, including the ability to produce exopolysaccharides, of lactic acid bacteria from fermented Tenggiri (Scomberomorus guttatus) and Talang (Chorinemus spp.) fish, also known as budu fish. Methods: Lactic acid bacteria were isolated from budu fish. These bacteria were characterized to determine tolerance to gastric pH values, growth curve, inhibitory ability against pathogenic bacteria, and ability to produce exopolysaccharides and to perform a molecular identification. Results: Twenty-nine lactic acid bacteria isolates from budu fish were determined to be of the Pediococcus species. Assessment of the physiological characteristics showed that Pediococcus sp. had a high acidifying activity and could grow at a pH between 2 and 11; the pH of the supernatant after 36 hours of incubation was 4.49. In terms of inhibitory activity against pathogenic bacteria, Pediococcus sp. demonstrated an inhibitory diameter of 20.5 mm against Escherichia coli, 23.0 mm against Staphylococcus aureus, and 21.0 mm against Salmonella thypi. The Pediococcus sp. strain produced exopolysaccharides ranging from 870 to 1910 mg/l and had 100% similarity with Pediococcus pentosaceus strain 4942. Conclusions: This study confirmed the presence of Pediococcus pentosaceus strain 4942 in budu fish, which can be used as a new probiotic based on its capabilities to kill pathogenic bacteria and produce exopolysaccharide compounds.

Due to its unique advantage of optical properties, nanophotonic metamaterials have gained extensive applications in perfect absorbers. However, achieving both dual-band and ultra-narrow linewidth in absorbers simultaneously remains a challenge for typical metal-dielectric based metamaterials. In this work, a dual-band ultra-narrow perfect absorber consisting of a double slotted silicon nano-disk array that located on a silver film with a silica spacer layer is proposed theoretically. By combining the hybrid mode excited by the coupling of diffraction wave mode and magnetic dipole mode with the anapole-anapole interaction, two absorption peaks can be induced in the near-infrared regime, achieving nearly perfect absorbance of 99.31% and 99.61%, with sub-nanometer linewidths of 1.92 nm and 1.25 nm respectively. In addition, the dual-band absorption characteristics can be regulated by changing the structural parameters of the as-proposed metamaterials. The as-designed metamaterials can be employed as efficient two-channel refractive index sensors, with a sensitivity and figure of merit of 288 nm/RIU and 150 RIU-1 for the first band, and a sensitivity and figure of merit of up to 204 nm/RIU and 163.2 RIU-1 for the second band. This work not only opens up a new design idea for the realization of dual-band perfect absorber synchronously with ultra-narrow linewidth, but also provides potential attractive candidates for developing dual-frequency channel sensors.

Dadih, also known as dadiah, is a traditional fermented buffalo milk from Minangkabau tribe in West Sumatra. This product is similar to yogurt, with a smooth and shiny surface, thick-bodied, creamy color and pleasant flavor. Microbes that play a dominant role in dadih fermentation are lactic acid bacteria, which possess several functional features, including antimicrobial, antioxidant, antimutagenic, hypocholesterolemic and immunomodulatory properties. However, traditional dadih production faced numerous challenges that impede its development, including the limitation of buffalo milk production, unstandardized dadih production due to the spontaneous fermentation, safety concerns from the absence of heat treatment, as well as limited shelf-life and consumer acceptance of traditional dadih product. Therefore, it is crucial to improve buffalo cultivation, using different types of milk, and apply pasteurization process in dadih production. Furthermore, innovation in dadih product that is more durable and preferred by consumers can be achieved through the application of various processing and packaging technologies.
