“…특히 quercetin은 양파의 주된 flavonoid 성분 으로 -OH기에 의해서 항산화 활성을 갖는 구조를 가지고 있어 활성산소의 산화활동을 억제하거나 제거하는 능력이 매우 강 하며 [2,23], collagen에 의해 촉진되는 혈소판의 활성을 억제시 켜 혈행 개선 효과를 가지는 것으로 알려져 있다 [8]. 양파의 가식부분에는 0.01%의 quercetin이 함유 되어 있으나, 겉껍질 로 갈수록 함량이 높아져 양파껍질에는 순무게의 6.5%에 달하 는 quercetin이 있다 [7,17]. 그러나 단체급식의 위생화, 소비자 의 신선식품선호 등의 추세로 대부분 껍질이나 뿌리를 절단한 깐양파와 같은 1차 가공형태로 유통되므로 가공 후 발생하는 부산물인 껍질과 뿌리는 사료로 이용하거나 일부는 폐기되고 있으나, 최근에는 이를 활용한 생리활성물질을 가지는 고부가 가치의 기능성 식품소재로서의 개발이 시도되고 있다 [9,10].…”
