The Linden (Tilia platyphyllos Scop.) is a highly popular herbal plant due to its central nervous system properties. In this study, thin layer drying kinetics of linden leave samples were experimentally investigated in an infrared (IR) dryer. In order to select the appropriate model for predicting the drying kinetics of linden leaves, eleven thin layer semi theoretical, theoretical, and empirical models, widely used in describing the drying behavior of agricultural products, were fitted to the experimental data. Moreover, the color, projected area (PA), total phenolic content (TPC), and total flavonoid content (TFC) were investigated. The results showed that the drying time decreased from 50 min to 20 min. with increased IR temperature from 50–70 °C. Therewithal, the Midilli model gave the most suitable data for 50 °C, 60 °C. Moreover, Verma et al. and Diffusion approximation models showed good results for 70 °C. The lightness and greenness of the dried linden leaves were significantly changed compared with fresh samples. The PA of dried sample decreased similar to the drying time. In addition, the drying temperature effect on the effective diffusion diffusivity (Deff) and activation energy (Ea) were also computed. The Deff ranges from 4.13 × 10−12 to 5.89 × 10−12 and Ea coefficient was 16.339 kJ/mol. Considering these results, the Midilli et al. model is above the 50 °C, 60 °C, and the Verma et al. and Diffusion to 70 °C, for explaining the drying behavior of linden leaves under IR drying. Moreover, it can be said that the Page model can be used, if it is desired, to express the drying behaviors, partially with the help of a simple equation material by drying. TPC and TFC values were statistically < 0.001 higher in dried samples compared to fresh samples; however, no change has been recorded of TPC and TFC values at different temperatures (50 °C, 60 °C, 70 °C).

The purpose of this study was to attempt the encapsulation of lemongrass (Cymbopogon citratus) essential oil utilizing spray drying technique. An array of process parameters including concentration of wall (15–30%), type of wall materials (maltodextrin, maltodextrin and gum Arabic mixture), and concentration of essential oil (0.5–2.0%) were thoroughly investigated. The results show that the use of sole maltodextrin as encapsulant gave microcapsules characteristics comparable to that of powder produced using maltodextrin and gum Arabic mixture. The encapsulation process that was performed with maltodextrin at the concentration of 30% as wall material and lemongrass essential oil at the concentration of 1.5% as core material showed highest drying yield (84.49%), microencapsulation yield (89.31%) and microencapsulation efficiency (84.75%). Encapsulated essential oils retained most of their major constituents in comparison with the bare essential oils without any significant compromise in product quality.

In drying systems, the examination of the drying rate values of the food product in advance gives important information about the raw material to be dried. In this study, thin-layer drying behavior of apple slices in a convective solar dryer was investigated. The experiments were carried out at a drying air temperature of 46–63 °C and a drying air speed of 0.7–1.8 m/s. In order to determine the drying kinetics, the mass change of apple slices was recorded under all drying air conditions. The effects of drying air temperature and speed, drying speed of apple slices, dimensionless moisture content, were investigated. In a solar drying system, thermal efficiency, solar radiation and air velocity values were measured. The drying kinetics of 15-mm thick apple slices were examined for three days in the solar drying system. Using the decision tree algorithm, which is a machine learning algorithm, a predictive model was created for moisture rate in drying experiments and four linear equations were obtained. According to obtained equations, the collector in the drying system depends on the inlet–outlet temperature values, the drying room inlet–outlet temperature values, the drying room humidity values and air velocity values. Moisture rate data were applied to twelve different models and their performance was determined by root mean square error (RMSE) analysis. The mathematical model with the least error rate was (RMSE: 0.09) Midilli model. A comparison was made between these drying models in the literature and the model generated by the decision tree algorithm. According to the results of RMSE error analysis, it was shown that the model created with the decision tree algorithm predicted the moisture rate values with less error values RMSE: 0.03) than the Midilli model.
