Winery effluent is known to have a high chemical oxygen demand (COD) and a low pH. In this study, we extensively analysed effluent from two cellars and studied the temporal changes over the duration of a harvest and the duration of a year. We found that ethanol contributes approximately 85% to 90% of the COD of raw winery effluent, with acetic acid being the next significant contributor. The pH showed some dependence on the concentration of acetic acid. The concentration of sodium in the effluent is strongly dependent on the cleaning regime in place at the cellar, and the concentration of potassium has been shown to be linked to the spillage of juice, wine or lees. The data and correlations presented here could allow for an artificial effluent to be prepared easily for research purposes.

Rotating biological contactors (RBCs) have been used as an efficient fixed film method of treating wastewater due to its advantages such as low energy and land requirements or simplicity of operation. In this article, we firstly describe the operation, benefits and drawbacks, hydrodynamics and typical applications of these bioreactors, and then review the main factors affecting their performance. Some aspects about RBC design and scale‐up, the main operational problems and their resolution are presented. The comparison of the performance of RBCs with other wastewater treatment systems as well as costs considerations and prospects are also discussed.

Turning wine (waste) into water: Toward technological advances in the use of constructed wetlands for winery effluent treatment

The research presented in this article describes an investigation into the use of vegetated submerged reedbeds (VSR) as a practicable alternative for effluent treatment for small-scale wine producers. In this study, we found that the hydraulic processes occurring within the VSR display significantly nonideal behavior. If the feed to the VSR was located on the surface the dead volume accounted for approximately 25% of the nonideal behavior of the system and bypass accounted for a further 6%. A preferential flow pattern was found within the VSR with the greatest flow occurring closest the surface and in the center, and the least at the sidewalls. We propose that the flow profile can be conceptualized as being hull shaped and found that this profile was the same for irregularly shaped gravel and for spherically shaped gelatinous beads. We, therefore, hypothesize that it is not dependent on the geometry of the VSR or the packing medium.
