Microbiological quality and safety assessment of sun dried Rastrineobola argentea (Mukene) sold at selected landing sites of Lake Victoria and Peri Urban Kampala City Markets

Sub-Saharan Africa has a high prevalence of food insecurity. Small pelagic fish such as Silver cyprinid (Rastrineobola argentea) which is indigenous to Lake Victoria, can be a nutritious animal sourced food that contributes to a more nutrient dense diet. Potential sustainable catch of Silver cyprinid is estimated at 2 million tonnes yearly, which is four times the amount of the current catch. Whole sun-dried Silver cyprinid was purchased from several markets in Kenya and analysed for nutrient composition, microbial counts and metal content. The results show that utilizing the whole potential catch of Silver cyprinid would provide a significant daily source of vitamin B12, calcium, zinc and iron to the roughly 33 million people living in the Lake Victoria basin. Heavy metal concentration appears to be low, but other food safety aspects like microbial counts call for value chain improvements. We conclude that the underutilized potential of sun-dried Silver cyprinid could substantially contribute to fight malnutrition and food insecurity by providing an affordable nutrient dense animal sourced food to a large number of people. It also highlights the need to improve the value chains to increase the safety of these products.

Potential Influence of Regulation of the Food Value Chain on Prevalence and Patterns of Antimicrobial Resistance: the Case of Tilapia (Oreochromis niloticus)

The current study was designed to evaluate the potential impact of the level of regulation on the prevalence and patterns of antimicrobial agent resistance in bacteria isolated from fish. The study sites included two large lakes and both semi-regulated and unregulated fish value chains. A total of 328 bacterial isolates belonging to 11 genera were evaluated for antimicrobial susceptibility testing using disk diffusion method. The bacteria species were tested against 12 different antibiotics (trimethoprim-sulfamethoxazole, tetracycline, ampicillin, cefotaxime, chloramphenicol, nalidixic acid, amoxicillin, meropenem, ciprofloxacin, nitrofurantoin, cefuroxime and kanamycin). Data analysis was done to assess the heterogeneity in proportion of resistant bacterial species within and between the two value chains using a random-effects model proposed by DerSimonian and Laird. Statistical heterogeneity within and between groups were estimated using the Cochran Chi -square test and the Cochrane- I 2 . Overall proportion of bacterial species resistant to antimicrobial agents in semi-regulated and unregulated value chains ranged from 0.00 to 0.88 and 0.09 to 0.95, respectively. Shigella spp. had the highest proportion of bacteria that were resistant against most of the antimicrobial agents used. The bacterial species were highly resistant to ampicillin and amoxicillin and the highest multi-drug resistance capacity was observed in Shigella spp. (18.3%, n = 328), Vibrio spp. (18.3%) and L. monocytogenes (12.2%). We observed strong heterogeneity within and between the two value chains regarding proportion of resistant bacterial species. Sun dried fish in both value chains had significantly high proportion of resistant bacterial species. Comparing the two value chains, unregulated value chain had significantly higher proportion of bacterial species that were resistant. In order to mitigate the risk of transmitting antimicrobial resistant bacteria to consumers along the fish value chain, good manufacturing practices coupled with identification and management of possible sources of contamination are recommended for fish and potentially other foods distributed along the less regulated value chains. Effect of smoking technologies on nutritional quality and concentration levels of polycyclic aromatic hydrocarbons (PAHs) in Mormyrus caschive and Oreochromis niloticus were determined to enable adoption and utilization of suitable facility that maintains good quality for sustainable supply of nutritious fish products in South Sudan. A total of 72 fresh M. caschive and O. niloticus were purchased, of which 24 were iced for reference and the other 48 were divided into two groups for pit and chorkor smoking. Experimental smoking of fish samples was conducted twice in a randomized design. Fish samples were analyzed for nutritional values using standard methods of the association of official analytical chemists and levels of PAHs using gas chromatography-mass spectrometry. Results revealed; the two smoking methods concentrated crude protein, fat and ash contents. However, fish smoked using chorkor had significantly higher nutritional values than fish smoked using pit kiln. About seven types of PAHs comprising of low and medium molecular weight were recorded from the two smoked fish species. Naphthalene and fluorene were the two dominant PAHs with fish smoked using pit kiln having significantly higher concentration levels of naphthalene (5.86±4.16 µg/kg) and fluorene (3.83±0.10 µg/kg) than fish smoked using chorkor oven. The study concluded that chorkor oven has better quality smoked fish than pit. Hence, its utilization and adoption for artisanal fisheries in South Sudan is recommended.
