Methods for the Determination of Triacylglycerols Composition: A Review of the Past Decade

Abstract

Over the last years (2008-2019), the most employed and innovative techniques for the analysis of triacylglycerol composition are presented and discussed in this article. Determining the composition of these molecules is of great importance since they are the main components of naturally occurring oils and fats and are products of great industrial and commercial interest. The application of oils and fats is closely related to the composition of these triacylglycerols in terms of fatty acids, having the chromatographic analysis techniques as the main and most used for the determination of this composition, with reversed phase high performance liquid chromatography and others techniques derived from it being the most employed. Ao longo dos últimos anos (2008-2019), as técnicas mais empregadas e inovadoras para a análise da composição de triacilgliceróis são apresentadas e discutidas neste artigo. A determinação da composição destas moléculas é de grande importância, uma vez que as mesmas são os principais componentes de óleos e gorduras de origem natural e são produtos de grande interesse industrial e comercial. A aplicação de óleos e gorduras está intimamente relacionada à composição desses triacilgliceróis em termos de ácidos graxos, tendo as técnicas cromatográficas de análise, como as principais e mais utilizadas para a determinação dessa composição, sendo a cromatografia líquida de alta eficiência em fase reversa e outras técnicas derivadas desta as mais empregadas.
