Metabolomic-Based Comparison of Traditional and Industrial Doenjang Samples with Antioxidative Activities

Abstract: Numerous varieties of doenjang are manufactured by many food companies using different ingredients and fermentation processes, and thus, the qualities such as taste and flavor are very different.
