Abstract:Sulforaphane (SFN), an isothiocyanate derived from cruciferous vegetables has been studied extensively for its health benefits, including cancer prevention. Plant‐based food sources contain SFN's precursor, glucoraphanin (GFN), which must be hydrolyzed by myrosinase to yield SFN.
