Making a Sustainable Diet Acceptable: An Emerging Programming Model With Applications to Schools and Nursing Homes Menus

Abstract: Background: Food consumption is one of the most important drivers of the relation between human well-being and Earth's ecosystems. The current production level is difficult to sustain without compromising environmental integrity or public health. This calls for a decisive change in food consumption patterns in order to improve nutrition quality while respecting biodiversity and ecosystems. This change will produce some effect only if it is also culturally acceptable, accessible, economically fair and affordabl… Show more

“…Therefore, the problem is a constrained Linear Integer Programming one. The optimization was carried out by using the online version of CPLEX for AMPL on the NEOS server ( (accessed on 3 December 2020)); the model is extensively described in the paper of Benvenuti et al [ 27 ].…”

“…75 Only a few recent studies have looked at developing nutritionally adequate, GHGEs-reduced, and affordable school menus using mathematical optimization. 76,77 Similarly, very few studies have considered the specific nutritional requirements of older Nutrition Reviews V R Vol. 00(0):1-20 adults, especially their relatively high protein needs (which could increase GHGEs when fulfilled), except when a multicriteria approach has been applied, as in the study of Grasso et al 78 More studies that take into account the dietary habits and nutritional requirements of children, adolescents, and older adults are needed to assess more finely the health dimension and to produce recommendations for more sustainable diets that are adapted for the various age groups.…”

“…In this context, this study aims to explore the relationships between the environmental impact and the cost of diet plans. This is achieved through the diet modeling approach proposed in Benvenuti and De Santis (2020). This approach, given a database of recipes, allows designing realistic menus whilst considering several indicators regarding their health, nutrition adequacy, acceptability, affordability, and environmental impact.…”

“…It corresponds to a set of compromised trade-off solutions from which the best solution for a particular problem can be chosen rather than considering the whole range of feasible menus. The interested reader is referred to Benvenuti and De Santis (2020) for a more detailed description of the model and a complete characterization of the Pareto optimal set.…”
