a b s t r a c tResponse surface methodology (RSM) was applied to optimize the oven drying conditions for lycopene content (Y 1 ) and lipophilic antioxidant capacity (Y 2 ) in decanter, a by-product of the pink guava puree industry. Two-factor central composite design was employed to determine the effects of two independent variables, namely temperature (X 1 : 50-80 C) and drying time (X 2 : 4-6 h). Lycopene content and lipophilic antioxidant capacity were measured using high-performance liquid chromatography (HPLC) and the ABTS radicals scavenging assay, respectively. A b-carotene bleaching assay was also applied to measure the antioxidant activity. Response surface plots showed that an increase in temperature and time significantly reduced the response variables. The optimum oven conditions for drying of decanter with minimum lycopene degradation were 43.8 C for 6.4 h, with a predicted lycopene content of 14 mg/ 100 g and antioxidant capacity of 21 mmol LE/100 g. To validate the optimized model, the experimental values were compared with the predicted values to check the adequacy of the model. The experimental values were found to be in agreement with those predicted, indicating the suitability of the model for optimizing the oven drying conditions for decanter.

Background/Aims: Increased ingestion of tomato, containing lycopene, has been associated with a decreased risk for atherosclerosis, although the exact molecular mechanism is still unknown. Here we review the available evidence for a direct regulation of tomato lycopene on cholesterol metabolism using results from experimental and human studies. Results: In human macrophages lycopene dose dependently reduced intracellular total cholesterol. Such an effect was associated with a decrease in cholesterol synthesis through a reduction of 3-hydroxy-3-methylglutaryl coenzyme A reductase activity and expression, a modulation of low- density lipoprotein (LDL) receptor and acyl-coenzyme A:cholesterol acyltransferase activity. An increase in cholesterol efflux through an enhancement of ABCA1 and caveolin-1 expression was also observed. In animal models of atherosclerosis, lycopene and tomato products decreased plasma total cholesterol, LDL cholesterol and increased high-density lipoprotein cholesterol. In agreement with the experimental results, most human intervention trials analyzed show that dietary supplementation with lycopene and/or tomato products reduced plasma LDL cholesterol dependently on the dose and the time of administration. Conclusions: Although lycopene and tomato products seem to possess direct hypocholesterolemic properties, more experimental studies are needed to better understand the mechanisms involved. There is also a need for more well-designed human dietary intervention studies to better clarify the role of lycopene as a hypocholesterolemic agent.

Background and aim: Antioxidants are substances that may protect our bodies against the effects of freeradicals. Free radicals are molecules produced when our body breaks down food, or by environmental exposures like radiation. Free radicals can damage cells, our goal of this work is to study the damage resulted by chronic low doses of gamma radiation using natural antioxidant like Lycopene that found in tomato that are available to most of the people especially those that work in the field of radiation.
