Localized and regulated peptide pigment formation inside liquid droplets through confined enzymatic oxidation

Abstract: We demonstrate multi-component liquid peptide droplets that upon enzymatic oxidation, give rise to the formation of soluble polyphenolic pigments as simple mimics of the biological pigment, melanin.
