Localization Analysis of Multiple Vitamins in Dried Persimmon (<i>Diospyros kaki</i>) Using Matrix-assisted Laser Desorption/ionization Mass Spectrometry Imaging

Abstract: IntroductionThe signaling and function of a vitamin is regulated by its concentration. A physiological response can also be induced by multiple hormones in synergistic or antagonistic actions, referred to as signaling crosstalk 1,2) . Vitamins are essential and functional compounds that cannot be synthesized by the human body. Vitamins are classified as either lipophilic or water-soluble. Lipophilic vitamins readily accumulate in the body whereas water-soluble vitamins are rapidly flushed from the system. Vita… Show more

“…Lastly, many plants are processed prior to human consumption. MSI of raw versus dried persimmon fruit tissues showed a dramatic change in localization and relative amounts of vitamins: lipid-soluble vitamin A1 increased in the pericarp, water-soluble vitamin B1 and B6 increased in the moist mesocarp, and vitamin C underwent photodegradation ( Shikano et al , 2020 ). Considering the prevalence of nutrient deficiencies and poor dietary habits of many humans, using MSI should assist in efforts for breeding, fortification, and processing of vitamin-rich foods.…”

“… Enomoto et al (2021 ) MALDI-MSI Persimmon epidermis During the drying, the concentration of vitamin A1 increased, the vitamins B1 and B6 unchanged. Shikano et al (2020 ) MALDI-MSI Rice The molecular types of lysophosphatidylcholine and the distribution of unsaturated fatty acids in rice were explored, and it was found that the content of lysophosphatidylcholine would affect the flavor of rice wine. “…The fruit of Diospyros kaki L., commonly known as persimmon, pertains taxonomically to the botanical family Ebenaceae and exhibits a growth pattern predominantly observed in regions characterized by temperate and subtropical climatic conditions (Shikano et al., 2020). More than 100 varieties of persimmon are divided into three categories: astringent, nonastringent, and pollination variants (Milczarek et al., 2018).…”
