Localization analysis of essential oils in perilla herb (Perilla frutescens var. crispa) using derivatized mass spectrometry imaging

Abstract: Perilla herb (Perilla frutescens var. crispa) is an annual plant that grows wild and is cultivated for food in many regions in Asia. Aromatic herbs such as perilla contain essential oils such as monoterpenoid perillaldehyde (PA) and bicyclic sesquiterpenes β-caryophyllene (βC) and have distinctive fragrances. PA and βC also exhibit antibacterial and local anesthetic activity. Perilla herb is thus used as a herbal medicine component (Legault & Pichette, 2007) and may be an antidote for food poisoning. “…4 ). Mass spectrometry imaging, as a method for detecting chemical components of the single-cell [ 59 ], can be explored in the future to help us further improve the accuracy of the proposed model. Moreover, our study provides a snapshot of the developmental stage of PGTs on leaves at a similar time point.…”

“…In addition, another derivatization advantage of GirT is that volatile molecules such as flavor compounds become stable due to an increase in their boiling point. (2) Japanese Black (Wagyu) cattle account for more than 90% of the beef cattle raised in Japan and are characterized by a high degree of marbling. Intramuscular fat is the fat deposited between and within muscle cells and is also called Marbling or Sashi.…”
