Lipase-Produced Hydroxytyrosyl Eicosapentaenoate is an Excellent Antioxidant for the Stabilization of Omega-3 Bulk Oils, Emulsions and Microcapsules

Abstract: In this study, several lipophilic hydroxytyrosyl esters were prepared enzymatically using immobilized lipase from Candida antarctica B. Oxidation tests showed that these conjugates are excellent antioxidants in lipid-based matrices, with hydroxytyrosyl eicosapentaenoate showing the highest antioxidant activity. Hydroxytyrosyl eicosapentaenoate effectively stabilized bulk fish oil, fish-oil-in-water emulsions and microencapsulated fish oil. The stabilizing effect of this antioxidant may either be because it ori… Show more

“…6,9,12,15‐Docosatetraenoic acid has cardioprotective, anticarcinogenic, antiatherosclerotic (Hussein, Hadi, & Hameed, ), and anticholesterol effects (Srivastava, Mukerjee, & Verma, ). Ethyl 5,8,11,14,17‐icosopentaenoate possess antiarteriosclerotic effects (Yano et al, ), hypolipidemic effects (Yano, Mizuguchi, Takasugi, Tanaka, & Sato, ), and antioxidant capacity (Akanbi & Barrow, ). Many studies also proved that fish oil rich in EPA and DHA have anticancer activity against different types of cancers (MacLean et al, ; Picot et al, ).…”

“…Cal-B was recently used to produce structured lipids for human milk fat analogs (Wei et al, 2020). Lipases from extremophiles have also been used for the synthesis of food additives such antioxidants, food flavors and coloring, phytosterol esters, sugar esters, and conjugates of bifuncitonal compounds (Akanbi & Barrow, 2018;Akanbi et al, 2019). Abbreviations: k cat , catalytic constant for conversion of substrates to products; k m , Michaelis constant; NM, not mentioned; T1/2, the half-life of enzyme; V m , maximal rate of catalysis.…”

“…However, the main challenge of enrichment with ω −3 PUFAs is their high susceptibility to oxidation, with the consequent nutritional loss and unacceptable rancidity and off‐flavor . In this context, microencapsulation and the addition of antioxidant have been used as possible strategies to avoid ω −3 PUFA oxidation …”
