Considering the FADS2 substrates with 18 carbons, it is however known for long that 6-desaturase affinity increases from oleic acid (18:1 n-9) to linoleic acid (18:2 n-6) and again to -linolenic acid (18:3 n-3) (Brenner and Peluffo, 1966), with a great impact of this substrate competition on the conversion of dietary (n-6) and (n-3) precursors to their longer highly unsaturated derivatives (Choque et al, 2014). These data suggest the importance of both the number (1, 2 or 3) of preexisting double bonds and the position (n-9, n-6 and n-3) of the methyl-terminal double bond in these 18-carbon chain FA substrates.…”
