Les résultats présentés sont issus d'une enquête financée par l'Observatoire Hommes-Milieux Pyrénées Haut Vicdessos, LabEx DRIIHM, ANR-11-LABX0010. Merci à Didier Galop (UMR 5602 GEODE) pour ses pistes archivistiques judicieuses et à Hugues Barcet (UMR 5602 GEODE) pour l'élaboration de la carte. 1 En 2021, la France comptait 46 fromages labellisés par une appellation d'origine protégée (AOP) et 9 par une indication géographique protégée (IGP) (CNAOL, 2021). Une grande partie de ces fromages proviennent de régions de montagnes et de piémonts. Alors que de nombreux fromages de montagne labellisés sont produits dans les Alpes et le Massif central, ils ne sont que deux dans les Pyrénées : l'AOP Ossau-Iraty (Pyrénées-Atlantiques), et l'IGP Tomme des Pyrénées (ensemble des départements pyrénéens). En Ariège, on trouve une dizaine de fromages de lait de vache, dont le Bethmale, non labellisé mais qui jouit d'une réputation régionale, plusieurs fromages de chèvre et quelques-uns de brebis. Les Pyrénées ariégeoises, où l'élevage boucher domine largement (Lazaro, 2015), sont, après les Pyrénées atlantiques, le second bassin de production fromagère du massif (PNR, 2019). 2Le fromage est un objet heuristique pour suivre et analyser les dynamiques de « reterritorialisation » (Rieutort, 2009), de « relocalisation » (Frayssignes et al., 2021) et de « patrimonialisation » de l'alimentation en montagne (Linck, 2005 ;Boëtsch et Hubert, 2007 ;Delfosse et Le Gall, 2018), la patrimonialisation étant ici entendue comme « une dynamique de valorisation […] consistant à actualiser, à adapter, à réinterpréter des traits puisés dans l'histoire d'un groupe, c'est-à-dire à combiner héritage et innovation, Des fromages en friches. The results presented are from a survey funded by the Observatoire LabEx DRIIHM, for his judicious archival leads and to Hugues Barcet (UMR 5602 GEODE) for drawing up the map. 1In 2021, France had 46 cheeses with a protected designation of origin (PDO) and 9 with a protected geographical indication (PGI) (CNAOL, 2021). A large proportion of these cheeses come from mountain and foothill regions. While many labelled mountain cheeses are produced in the Alps and the Massif Central, there are only two in the Pyrenees: the PDO Ossau-Iraty (Pyrénées-Atlantiques), and the PGI Tomme des Pyrénées (all Pyrenean départements). Ariège has about ten cow milk cheesesincluding Bethmale, which is not labelled but has a regional reputation-, several goat milk cheeses, and a few ewe milk cheeses. The Ariège Pyrenees, where livestock for meat is by far the most prevalent type of farming (Lazaro, 2015), is the second-largest cheese production area in the massif, after the Atlantic Pyrenees (PNR, 2019). 2Cheese is a heuristic object for monitoring and analysing the dynamics of "reterritorialization" (Rieutort, 2009), "relocalization" (Frayssignes et al., 2021) and food "heritagization" in the mountains (Linck, 2005;Boëtsch and Hubert, 2007;Delfosse and Le Gall, 2018).
