The idea that competitive balance increases the utility of fans, and therefore their spending and the revenue of professional clubs, lies at the heart of sports economics in general and the economics of football in particular. This notion of competitive balance is often invoked to explain the decisions of professional leagues to change the rules of competitions or the distribution of TV rights. However, the empirical literature shows that the relationship between competitive balance and fan demand is far from obvious. In this paper, we examine the idea of competitive balance as perceived by football fans. In the case of Ligue 1, it is mainly explained by medium-and long-term uncertainty, while in the case of the Champions League it is more a matter of long-term suspense. But uncertainty over the outcome is far from being the only factor explaining the demand for football since around 30% of fans report that they would always be willing to attend or watch games even in the hypothetical case that there is no suspense left.

La consommation de produits animaux est un enjeu crucial de la sécurité alimentaire mondiale. La consommation élevée de protéines animales en France est désormais au cœur des enjeux de la durabilité, confrontée à des recommandations publiques moins favorables, après avoir suivi lors des décennies passées une trajectoire croissante. Cependant de profonds changements ont eu lieu derrière cette évolution, aussi bien entre grandes catégories d’aliments qu’en leur sein, comme le montre l’analyse des données d’achat sur quatre décennies. Désormais dans un contexte de saturation des besoins en protéines, et en particulier d’origine animale, les ménages sont amenés à réorienter leurs modes de consommation. Des pistes d’incitation sont proposées via des simulations de hausses de prix dont on examine les conséquences en termes de durabilité, au niveau de la réduction des émissions environnementales, de la qualité nutritionnelle de l’alimentation, et des inégalités sociales. La combinaison de ces trois dimensions permet d’éclairer le débat sur la mise en place de politiques publiques durables.

Animal-source food consumption is considered a key element in studying and characterising shifts in food diets. But it is most often studied from the macro-nutritional and macro-economic perspectives of the 'nutrition transition' model. This article advocates the need for a socio-anthropological examination of the animal-source food consumption, involved in the transition phenomena. Based on a review of the literature on two different cases (India and France) our study sheds light on social and cultural factors of 'de-animalisation' processes, and advocates an alternative approach to transitions in food. This has led us to examine different forms of animal-source food consumption and their evolutions at smaller social scales, taking into account sociocultural factors such as the symbolic dimensions of food, the eaters' viewpoints, the processes of sociocultural differentiation, the sociocultural identities, the contexts of choice and consumption or the role of critical reflexivity in the evolution of diets, particularly in the phenomena of 'de-animalisation'. Finally, this article raises a number of further questions for researchers interested in the issue of diet transition process.
