Abstract: Wild artisanal cultures, such as SCOBY-based membranes (Symbiotic Culture of Bacteria and Yeasts) and water kefir grains (WKG), are complex consortia of microorganisms comprising yeasts, lactic and acetic acid bacteria, with a large strains’ diversity and abundance.
