Jelly Candy Hydroxyapatite from Mackerel Fish Bone

Abstract: Background: Calcium is a mineral that is needed by bones and teeth. Calcium needs have not been achieved evenly among children, about 1000mg/day. Hydroxyapatite contains Ca and apatite which is good for the maintenance of bones and teeth. Hydroxyapatite is made from the bones of mackerel, where the bones of mackerel have a high source of calcium. For easy being consumed for children, the hydroxyapatite made in the form of jelly candy. Objective: The aim of this research was Hydroxyapatite Mackerel Fish Bone ca… Show more

“…Interestingly, a weak but significant association between sweetness and overall acceptability does play a role in shaping consumers' overall liking. The concentration of calcium exceeds the optimal range in a food product and might lead to masking or suppression of sweetness perception (Anggresani et al., 2022). However, in certain formulations, this effect did not show a significant association ( p > 0.05) with overall acceptability.…”

“…Fish bone waste is a type of waste with economic worth, but neither the government nor society have given it any attention. Fish bone waste can be converted into hydroxyapatite so that it doesn't pollute the environment [21]. Since calcium, phosphorus, and carbonate are the main components of fish bones, you can be sure that they have a very high mineral concentration when compared to other body sections.…”
