Isolation and Characterization of Pediococcus sp. HLV1 from Fermented Idly Batter

Abstract: The aim of the present study is the isolation and characterization of the lactic acid bacteria from idly batter, a traditional Indian fermented product. To achieve the aim, 10 idly batter samples were selected from different regions of Kadapa district. In the primary isolation and screening process, 50 lactic-acid-producing bacteria were isolated, and from them, six strains were selected based on their lactic acid yielding capacity for further evaluation. The selected cultures were studied for their phenotypic… Show more

“…In this study, Pediococcus pentasaceus grew better with peptone as a nitrogen source. This observation had earlier been reported by Katepogu et al (2022). However, when tryptone was employed as a nitrogen source, Lactobacillus brevis grew better demonstrating their capacity to utilize the peptides and amino acids present in tryptone for growth.…”

“…In fact, if examined more deeply, Tropical almond nut has a high nutritional content such as 4.3 (g/100g) moisture, 23.3 (g/100g) protein, 4.2 (g/100g) ash, 12.5 (g/100g) carbohydrates, 0.2 (mg/100g) minerals, and 3225.2 (mg/100g) calcium [10]. The high content of protein and other nutritional values in Tropical In addition, in order for bacteria to grow properly, it is necessary to have a source of sugar as a carbon source such as glucose, fructose, lactose, and sucrose [12]. Some food stuffs contain various types of sugar, one of which is honey.…”
