Is There an Ideal Diet to Protect against Iodine Deficiency?

Abstract: Iodine deficiency is a global issue and affects around 2 billion people worldwide, with pregnant women as a high-risk group. Iodine-deficiency prevention began in the 20th century and started with global salt iodination programmes, which aimed to improve the iodine intake status globally. Although it resulted in the effective eradication of the endemic goitre, it seems that salt iodination did not resolve all the issues. Currently, it is recommended to limit the consumption of salt, which is the main source of… Show more

“…Iodine deficiency, in addition to other nutrients, may result from dietary restrictions, e.g., as a result of a vegan or vegetarian diet [83]. In Poland, as in other countries, iodine deficiency continues to be a problem [84]. Since there is no diet that fully covers iodine requirements [84], patients should be advised to consume foods containing iodine.…”

“…This finding could be explained by the notion that iodine levels in freshwater fish depend on the locality and the regularity of consumption of fish. 26,27 Moreover, during pregnancy there are variations in the functionality of the thyroid. This can increase the risk of inadequate iodine intake for some mothers.…”

“…Thus, a multisensor instrument which is able to perform a multidimensional assessment is needed. To this scope, in this work, a multi-focus and multidimensional approach is proposed: the first focus is on seafood, which represents an optimal dietary option for iodide consumption [ 14 ]; the second focus is on sea environment (seafood supplying source) which is naturally rich in iodide concentration. On this basis, a multisensor instrument [ 15 ], which is able to evaluate iodide content in seawater and seafood (via an electrochemical sensor) and to discriminate when the seafood is fresh or defrosted (via a Quartz Micro balance (QMB)-based volatile and gas sensor), is strategical for seafood quality assurance.…”
