Iron bioavailability from ferric pyrophosphate in rats fed with fructan-containing yacon (Smallanthus sonchifolius) flour

Abstract: a b s t r a c tThe effects of inulin-type fructans (ITF)-containing yacon flour (YF) on Fe bioavailability from ferric pyrophosphate (FP) were evaluated in Fe-deficient rats using the Hb repletion efficiency (HRE) assay. Weanling male Wistar rats were fed a low-Fe diet (12 mg/kg) for 15 days followed by 2 weeks of Fe repletion with diets providing 35 mg Fe/kg as either ferrous sulphate (FS) or FP, supplemented with 7.5% ITF as either YF or Raftilose (RAF), a purified ITF. ITF increased caecal fermentation, whe… Show more

“…Weber et al (2010) found significant reduction in the intestinal pH in animals fed a diet containing a mixture with high fiber content. Other authors found similar results, especially in diets supplemented with soluble dietary fiber (Scholz-Ahrens & Schrezenmeir, 2002;Lobo et al, 2011).…”

“…However, other studies have pointed out that anemic animals fed soluble fiber showed recovery of hemoglobin similar to that of the control group; in those studies, ferrous sulfate was used as the control diet (De Cássia Freitas et al, 2006;Feltrin et al, 2009). The lack of consensus among various studies is due to experimental conditions such as short-term or long-term consumption of the food test, experimental models, the food matrix, and the age and/or nutritional/physiologic status of the animals (Lobo et al, 2007(Lobo et al, , 2011Scholz-Ahrens & Schrezenmeir, 2007).…”

“…The cecum and its contents were removed, weighed, placed in a Petri dish with ice (16) and cut open along the small curvature. The cecal content pH was measured in situ by inserting an electrode (UP-25; Denver Instrument, Denver, CO) through the ileocecal junction, as described previously (17). Cecal tissue samples were collected and fixed in 10% formaldehyde solution, stored in 70% ethanol and further used for histological and morphometric analyses.…”
