“…Since many of the unsaturations on indoor surfaces come from cooking and skin oils, we looked first to the vegetable oil ozonation literature to estimate the OPX yields. Vinet et al 69 measured the peroxide index and ozone “applied” for various vegetable oils that were ozonated. The peroxide index (PI) is a measure of the concentration of peroxidic compounds in solution.…”

“…The peroxide number indicates the amount of saturated fatty acids that undergo oxidation [12]. The results of measuring the peroxide number of ozonated Sumbawa oil can be seen in Table 2.…”

“…The reaction of ozone with oil or ozonation of oil containing unsaturated fatty acids leads to the formation of oxygenated compounds such as hydroperoxides, ozonides, and aldehydes, which reduce bacterial infections in wounds. The ozonation process is widely applied to various types of oil, both for medical, energy and other purposes, such as kapuk oil [9], rice bran oil [10], sunflower oil [11][12][13], olive oil [14][15][16][17][18][19][20], vegetable oil [21][22], palm seed oil [23], waste cooking oil [24] and bulk frying oil [25].…”

“…Near infrared spectroscopy (NIRS) has also been reported as a powerful technique that allows to directly correlate spectral changes with the chemical alteration of lipids. [14,15] NIRS is an analysis method that uses the near infrared (NIR) region of the electromagnetic spectrum between 780 and 2500 nm, corre-sponding to overtone and combination bands. [16] This method has already been applied to in situ monitoring of lipid oxidation in O/W emulsions (using a fiber optic probe), and the conjugated diene values have been correlated to the recorded NIR spectra for the first 7 days of aging at 25 • C. [9] The originality of the present study is to develop a noninvasive method using NIRS to assess the oxidative state of a multiple emulsion during its storage.…”
