Abstract:The Paeonia genus, an important source of crude drugs, has been extensively used in traditional Chinese medicine (TCM) to treat cardiovascular and female-related diseases. Although many peony species have been investigated, the study of Paeonia rockii is still quite limited, especially its chemical composition. Here, an advanced ultra-high-performance liquid chromatography (UHPLC) analytical technique combined with Q-Exactive Orbitrap hybrid quadrupole-Orbitrap mass spectrometry utilizing high-resolution full MS and MS/MS scan modes was applied to screen and identify the chemical constituents of this species. As a result, a total of 46 compounds were characterized, including 11 monoterpene glycosides, five phenolic acids, six tannins and 24 flavonoids. Among them, 16 compounds were reported for the first time in Paeonia rockii.

Influence of Cooking Methods on Free and Bound Phenolic Acids in Korean Black Rice

The composition and thermal stability of free and bound phenolic acids were investigated in Korean black rice cultivars, Sintoheugmi and Sinnongheugchal. Protocatechuic acid, 4‐hydroxybenzoic acid, vanillic acid, p‐coumaric acid and ferulic acid were identified and quantified. Protocatechuic acid was predominant (81–93% of the total amount) in free form, whereas ferulic acid was predominant (about 60%) in bound form. The contents of free and bound phenolic acids were three times higher in raw Sinnongheugchal compared with raw Sintoheugmi. The thermal stability of the phenolic acids was assessed by boiling, steaming, pan‐frying and roasting. All cooking methods caused significant increases in the total amount of free phenolic acids. In particular, free protocatechuic acid content increased 4–11 times in both cultivars. The free protocatechuic acid content correlated negatively with the total anthocyanins contents indicating that protocatechuic acid was generated from the decomposition of anthocyanins during the thermal processing. Practical Applications Black rice is thermally processed by varying cooking methods. All cooking methods changed the profile of the free phenolic acids. Particularly, the free protocatechuic acid content increased up to 11‐fold in cooked black rice compared with raw rice. This indicates that the cooking temperature and cooking time affect differently the contents as well as the composition of phenolic acids. These results will be useful in predicting the influence of thermal processing on phenolic acids in black rice.

Chinese kale (Brassica alboglabra Bailey) is a widely consumed vegetable which is rich in antioxidants and anticarcinogenic compounds. Herein, we used an untargeted ultra-high-performance liquid chromatography (UHPLC)-Quadrupole-Orbitrap MS/MS-based metabolomics strategy to study the nutrient profiles of Chinese kale. Seven Chinese kale cultivars and three different edible parts were evaluated, and amino acids, sugars, organic acids, glucosinolates and phenolic compounds were analysed simultaneously. We found that two cultivars, a purple-stem cultivar W1 and a yellow-flower cultivar Y1, had more health-promoting compounds than others. The multivariate statistical analysis results showed that gluconapin was the most important contributor for discriminating both cultivars and edible parts. The purple-stem cultivar W1 had higher levels of some phenolic acids and flavonoids than the green stem cultivars. Compared to stems and leaves, the inflorescences contained more amino acids, glucosinolates and most of the phenolic acids. Meanwhile, the stems had the least amounts of phenolic compounds among the organs tested. Metabolomics is a powerful approach for the comprehensive understanding of vegetable nutritional quality. The results provide the basis for future metabolomics-guided breeding and nutritional quality improvement.
