Investigating the Effects of Large-Scale Processing on Phytochemicals and Antioxidant Activity of Pomegranate Juice

Abstract: The effects of four important stages of pomegranate juice processing, i.e., pasteurization, enzymatic treatment, filtration and thermal concentration were evaluated based on physicochemical characteristics, bioactive compounds (phenols, flavonoids and anthocyanins) and antioxidant activity (DPPH, FRAP and CUPRAC). Pasteurization had no significant effect on total phenolic content, but it significantly reduced the total flavonoid and total anthocyanin contents. Enzymatic treatment, filtration and thermal concen… Show more

“…TAC was calculated by the differential pH method as described by Farahmand, Golmakani, Mesbahi, and Farahnaky (2017). The absorbance was measured at 510 and 700 nm in buffers at pH values of 1.0 (potassium chloride 0.025 M) and 4.5 (sodium acetate 0.4 M).…”

“…Rabab variety) were purchased from Rudkhor village, 100 km away from the east of the city of Neyriz (Fars province, Iran). Total phenolic content, total flavonoid content, total anthocyanin content, antioxidant activity, protein content and physicochemical properties of pomegranates cultivated in Neyriz were determined in the study conducted by Farahmand et al 21 Pomegranates were stored at −20 ∘ C until the time of the intervention. During the intervention, each week some pomegranates were thawed, crushed and squeezed, and the juice was collected in 500 mL bottles.…”

“…India is the world's largest producer of pomegranates (900K tons), followed by Iran (800K tons), Turkey (376K tons), and USA (110K tons) . Pomegranate juice industries are known for the abundant pomegranate seeds and peel that they produce as by‐products that are valuable sources of natural antioxidants such as anthocyanins, phenolic acids (i.e., ellagic acid, ferulic acid, and gallic acid), flavonoids (catechin and quercetin), and hydrolysable tannins (i.e., gallotannins and ellagitannins) . It has been reported that pomegranate peel is more potent and capable in terms of scavenging capacity, as compared to the peels of kinnow, mango, banana, and sapodilla fruits …”
