Abstract:The enzyme known as invertase catalysis the conversion of sucrose into glucose and fructose (EC 3.2.1.26). The best source of invertase is yeast. Internal and exterior in vertases are the two varieties found in S. cerevisiae. Invertase catalyses the hydrolysis of sucrose into fructose and glucose.
