Inulinase Activity of Extracellular Protein of <i>Lactobacillus casei </i>AP in Different Growth Conditions

Abstract: Inulinase is an enzyme that catalyzes the reaction involving the hydrolysis of inulin into fructose and/or small fructooligosaccharides by cutting the β-2,1 terminal.
