Abstract:Côte d'Ivoire is the leading exporter of Palmer and Keitt mangoes in sub-Saharan Africa. Despite the importance of the foreign exchange generated, these tropical fruits suffer enormous post-harvest losses due to their high perishability, mainly caused by enzymatic browning.
