The purpose of the study is to establish the estimated breeding value index of Kazakh white-headed cattle by productive indicators. The Estimated Breeding Value (EBV) of the productive indicators of animals of the Kazakh white-headed breed was determined for 2018-2021. The index values were further interpreted as an assessment of the own genetic productivity of each evaluated animal relative to the corresponding average values. For the Kazakh white-headed breed, the estimated breeding values in terms of live weight at birth in 2018 ranged from -8.00 to +12.

The purpose of the research is to establish indicators of heat resistance and study the growth of Kalmyk cattle youth in different natural, climatic, organizational and technological conditions in the highlands of the Kabardino-Balkarian Republic. The investigations were carried out in LLC «Dargan» (Chereksky district, in village Gerpegezh) and LLC «Malka» (Zolsky district, in village Malka) of the Kabardino-Balkarian Republic of the Kalmyk breed bulls during the period of grazing (from 7 to 12 months). The highest values of the heat resistance index and tolerance coefficient were recorded at the beginning of the grazing period in species of both farms, when the ambient temperature during the day was within comfortable limits for the species as a whole. Subsequently, the heat resistance indicators were decreased by the middle of the analyzed period of detention, which is explained by the temperature stress for the body of the experimental animals. However, temperature conditions and resistance were restored to their original values for them by the end of the experiment. Inter-farm divergences in growth intensity in age period of 7-9 months were 31 g (P<0.95), 9-12 months - 65 g (P<0.999) and for the entire period - 52 g (P<0.99). The largest absolute increase in live weight over the analyzed period was distinguished by bulls from LLC «Malka», which were under other conditions, recorded the lowest feed costs per 1 kg of live weight gain. Thus, the differences in the cost of energy feed units in comparison with individuals from «Dargan» LLC were 0.18, digestible protein was 11 g.

In modern conditions scientifically proved requirements to quality of slaughter cattle and meat are defined by the standards considering conditions of manufacture of raw materials, its processing, requirements of the consumer. The standards formulate and regulate in detail the measures that control the quality of products. On the basis of standards are built procurement prices, premiums, discounts at all stages of production, circulation and consumption. Standards cannot remain unchanged for a long time, as the requirements for the quality of meat are constantly changing. This research work is aimed at developing a standard for cutting and deboning of cattle meat according to international requirements, which are exported to countries near and far abroad. This article presents the results of research related to international standards for cutting and deboning of veal carcasses. The fat content of young cattle meat has been estimated, as well as its classification by classes and additional classes and categories. Depending on age and breed, chemical and morphological compositions of meat of young cattle were studied. Qualitative indicators of post-slaughter meat of young cattle, the degree of maturity and meat spoilage were checked. The boundaries and cuts of their fore and hind quarters were also determined. As a result of the research, standard models of meat and fat coloration, marbling were studied and determined. The innovative technique of cutting and deboning of carcasses of cattle on the production sites of IE "Manashov A.A." and LLP "Meat Processing and Service" was introduced. The results of the analysis indicate the need to take into account these data in the development of technological scheme of cutting and deboning of veal carcasses, corresponding to international standards, and their subsequent implementation at meat processing enterprises of the Republic of Kazakhstan.
