Influence of elicitation with H2O2on phenolics content, antioxidant potential and nutritional quality ofLens culinarissprouts

Abstract: The significantly elevated antioxidant potential, high content of resistant starch and low starch bioaccessibility of sprouts elicited with H₂O₂ indicated that this technology allows the production of functional food products with particular characteristics.

“…Apart from providing major nutritional components, food should be a source of biologically active substances regulating physiological processes in the human organism (Zhao 2007, Świeca andBaraniak 2014). Wheat is one of the most popular sources of food and should have a high nutritional value.…”

“…The pro-health quality of low-processed food, e.g., sprouts, is strongly determined by its chemical composition (Pérez-Balibrea, et al, 2011;Świeca and Baraniak, 2014a;2014b;2014c). Phenolics and ascorbic acid -compounds with well-documented biological activity (Fang et al, 2002;Gawlik-Dziki et al, 2012) -play a very important role in the creation of food bioactivity.…”
