Industrial applications of whey

Abstract: Almost 85% of the entire milk utilized for manufacturing cheese/paneer is dismissing as whey. Most of the milk plants do not have a decent pre-treatment practice for the jettisoning of whey and the discarding of whey. Whey deemed as the most significant pollutant of the dairy enterprise, not solely due to its high organic content but also owing to its lofty volume. Whey protein-enriched method can develop for end groups such as infants, cardiac-risk group, and diabetics. Whey is assuredly an attractive growth … Show more

“…Te leaf extraction was done using two diferent techniques and solvents: cold maceration with ethanol and digestion extraction with water. Obtaining the percentage yield of extract is a particularly signifcant aspect in phytochemical extraction to assess the efciency of the standard extraction for a particular plant, diferent parts of the same plant, or diferent solvents used [38]. Te cold maceration method exhibited a higher yield of extract, which could be an efect of the extracting solvent nature, owing to the presence of various compounds with diferent chemical properties and polarities that may or may not be soluble in a particular solvent [39].…”

“…[20] There are several different types of antioxidants, including vitamins (such as vitamin C and vitamin E), minerals (such as selenium and zinc), and phytochemicals (found in plant-based foods), such as flavonoids and carotenoids. [21] Pineapple peel contains a significant amount of ascorbic acid in it which is a powerful antioxidant. The production of collagen in bones, blood vessels, cartilage, and muscle, as well as the absorption of iron, are both supported by vitamin C. Additionally, vitamin C lowers the risk of developing some cancers, such as colon, oesophageal, and stomach cancers, and delays the onset of urinary tract infections during pregnancy.…”

“…Hydrolysates, with a molecular weight under 10 kDa composed of basic, aliphatic and polar amino acids with an isoelectric point greater than 10, present excellent antiviral effect due to their capacity to form amphipathic structures. Their good efficacy, safe, selectivity, and predictable metabolism are the main strengths of peptides in drug production [ 123 , 124 , 125 , 126 , 127 ].…”
