Chronic stimulation of the oral mucosa with certain irritants, such as papain (a cysteine protease) and tannic acid, has been reported to induce new constituents (cystatin S, a cysteine protease inhibitor, and proline-rich proteins, tannic acid-binding proteins) in the saliva of rats and mice (Mehansho et al, , 1985Glendinning, 1992;Naito et al, 1992;Ninomiya et al, 1994). When fed diets containing considerable amounts of papain (1.0%) or tannic acid (92.6% as sorghum grains), animals did not consume the required amounts of the diet to maintain or increase body weight at the beginning of feeding.…”
