“…Oral application of capsaicin, a pungent ingredient of hot red pepper, produces mucosal inflammation responses, bum sensations, and stimulates salivary secretion (Duner-Engstrom et al, 1986;Green, 1989). Chronic stimulation of the oral mucosa with certain irritants, such as papain (a cysteine protease) and tannic acid, has been reported to induce new constituents (cystatin S, a cysteine protease inhibitor, and proline-rich proteins, tannic acid-binding proteins) in the saliva of rats and mice (Mehansho et al, , 1985Glendinning, 1992;Naito et al, 1992;Ninomiya et al, 1994).
