Inactivation of Escherichia coli O157:H7 by essential oil from Cinnamomum zeylanicum

Abstract: Escherichia coli O157:H7 is a pathogen strain, which causes hemorrhagic colitis, hemolytic uremic syndrome and thrombotic thrombocytopenic purpura in humans. The control of bacterial cells in foods is an important factor to reduce foodborne diseases due to E. coli O157:H7. Assays to inactivate E. coli O157:H7 were carried out by using the cinnamon oil obtained by steam distillation for 6 hours. When E. coli O157:H7 cells were incubated at 37°C for 2 hours in the presence of 0.025% of the essential oil from cin… Show more

“…It is also used in food products to inhibit growth of fungi, molds, yeasts and bacteria [30]. Cinnamon oil has been reported to be able to inhibit both Gram-positive and Gram-negative bacteria, including Escherichia coil O157:H7, Helicobacter pylori, Listeria monocytogenes, and Salmonella choleraesuis [31,32]. The chemical components and compounds responsible for the antimicrobial activity of cinnamon oil vary depending on the plant part utilized and the geographical source of the plant [15,29].…”

“…The essential oils were volatilized with boiling water at temperature 100°C for 5 and 10 hours. The recovered mixture was allowed to settle and the oil was withdrawn [9][10] . After the steam distillation process, the product was collected and separated using separatory funnel.…”

“…9 Some substances such as essential oils from Cinnamomum zeylanicum have shown bactericidal activities. 82 But, the above efforts plus dietary manipulations are not promising strategies. Thus, hygienic management of animal and food products remain better options in control of STEC transmission.…”
