Improving the drying performance of parchment coffee due to the newly redesigned drying chamber

Abstract: The Colombian coffee growers face many complications when using traditional open-sun drying techniques such as post-harvest process delays or incomplete grain dryness because of climate conditions. Therefore, local workshops began fabricating low-capacity dryers simulating the industrial equipment working principles. One of the most commercialized units is a triple tray rectangular-shaped dryer with a 31.25 kg capacity of dry parchment coffee per batch, providing the issue with an acceptable solution. However,… Show more

“…As Figure 5 shows, during drying, there was a significant shrinkage ratio of ~7% (Duque‐Dussán & Banout, 2022) for the endosperm (seed) than the one for the endocarp (Burmester & Eggers, 2010; Nilnont et al, 2012; Sfredo et al, 2005). This generates an air chamber that restricts the moisture flow from the inner part to the surface, making the coffee drying process more energy‐demanding than other grains (Duque‐Dussán et al, 2022).…”

“…Afterwards, the berries were processed through the wet method in Cenicafé's seed processing facility, including classification, pulping, fermenting, washing, and drying (Duque‐Dussán & Banout, 2022). After drying, 8 kg of dry parchment coffee (DPC) was obtained; this mass was then hulled to remove the endocarp (parchment), from which 720 g were peaberries.…”

“…The solar drying requires direct sun exposure in handcrafted drying structures known as marquesina . For the mechanical drying a three‐mesh trays static dryer is frequently used in a forced hot air convection, it uses fuels such as; coal, wood, coffee chaff, propane gas (Deeto et al, 2018; Duque‐Dussán & Banout, 2022; Parra‐Coronado et al, 2008a, 2008b).…”

“…Some research on coffee drying has made relevant contributions to coffee drying (Bustos‐Vanegas et al, 2022; Costa et al, 2021; Duque‐Dussán & Banout, 2022). The optimization of the mechanical drying operation highlights the energetical efficiency in the process guaranteeing the physical quality of the coffee bean.…”
