Improving Physicochemical Stability of Quercetin-Loaded Hollow Zein Particles with Chitosan/Pectin Complex Coating

Abstract: Hollow nanoparticles are preferred over solid ones for their high loading capabilities, sustained release and low density. Hollow zein particles are susceptible to aggregation with a slight variation in the ionic strength, pH and temperature of the medium. This study was aimed to fabricate quercetin-loaded hollow zein particles with chitosan and pectin coating to improve their physicochemical stability. Quercetin as a model flavonoid had a loading efficiency and capacity of about 86–94% and 2.22–5.89%, respect… Show more

“…However, although their particle size was almost unchanged in AP at 37 °C, the PDI of CUR-PLGA NPs increased with time, indicating that CUR-CS/PLGA NPs were more stable than CUR-PLGA NPs for the reason that CS could enhance the stability of NPs . It indicates that different temperatures and media have a great impact on the stability of nanoparticles …”

“…Natural polysaccharides are considered to be effective stabilizers for zein carriers, such as gum, xanthan gum, and alginate. Muhammad et al [ 26 ] used a zein–pectin carrier to load quercetin, which improved the thermal stability and photostability of quercetin. However, the high viscosity and low charge density of some polysaccharides limit their application [ 27 ].…”
