Improvement of Freeze-Dried Survival of Lactiplantibacillus plantarum Based on Cell Membrane Regulation

Abstract: The cell membrane of Lactiplantibacillus plantarum is a key structure for cell survival. In this study, we aimed to improve the lyophilization resistance of L. plantarum by regulating the cell membrane structure. Unsaturated fatty acids or cell membrane-regulating substances were added during culturing to determine their effect on the composition of cell membrane fatty acids and the survival rate of the cells after freeze-drying. The results showed that Tween 80, β-carotene and melatonin increased the lyophili… Show more

“…The improved viability observed with L-theanine-containing protectants can be attributed to their interaction with the membrane lipid layers, leading to the formation of new layer structures that enhance membrane uidity and survivability in adverse conditions (Cui et al, 2022). Notably, several amino acids have been shown to effectively support bacterial viability during the freeze-drying process (Romyasamit et al, 2022), further validating the effectiveness of L-theanine-containing protectants in enhancing probiotic survival.…”

“…[8]. В настоящее время одним из наиболее простых и распространенных методов хранения микроорганизмов является низкотемпературная консервация [12,13]. В связи с вышеизложенным перед нами была поставлена цель -изучить возможность низкотемпературной консервации штаммов B. anthracis.…”
