Industry 4.0 is changing the industrial environment. Particularly, the emerging Industry 4.0 technologies can improve the agri-food supply chain throughout all its stages. This study aims to highlight the benefits of implementing Industry 4.0 in the agri-food supply chain. First, it presents how technologies enhance the agri-food supply chain development. Then, it identifies and highlights the most common challenges that Industry 4.0 implementation faces in agri-food’s environment. After that, it proposes key performance indicators to measure the advantages of this implementation. To achieve this, a systematic literature review was conducted. It combined conceptual and bibliometric analyses of 78 papers. As a result, the most suitable technologies were identified, e.g., Internet of Things, Big Data, blockchain and cyber physical systems. The most used indicators are proposed and the challenges of implementation were detected and classified in three groups, i.e., technical, educational and governmental. This paper highlights and exemplifies the benefits of implementing Industry 4.0 facing the lack of knowledge that exists nowadays. Moreover, it fulfils the gaps in literature, i.e., the lack of information about the implementation of technologies 4.0 or the description of the most relevant indicators for Industry 4.0 implementation.

Today, the issue of economic circularity is certainly not a new concept. It represents an essential issue in any production system since it is an alternative to the current production and consumption model. The importance of the topic is confirmed worldwide. However, there is still a “circularity gap” that can be bridged in the short and medium term, probably with the use of innovative and digital technologies. In fact, many researchers agree that the sustainable future can be achieved in the long term thanks to digital technologies (i.e., IoT, artificial intelligence, quantum computing etc.) which, thanks to their speed of calculation, are able to identify the right solutions at the right time. The challenge, therefore, will be to develop innovative technologies and tools for the efficient use of resources in industries for sustainable production. Thus, the aim of this study is to define the current state of the art and future research developments in this very promising field. To achieve this goal, the integration of a “set” of tools, based on the AHP method and the PRISMA protocol, is proposed. The results aim to be a guideline for decision makers and researchers interested in this topic.

The food metabolic processes influence the gas composition of packaged products: by finely tuning the gas fluxes through the packaging, the aerobic and anaerobic respiration processes can be efficiently exploited to regulate the equilibrium gas concentrations. In this work, we present a generalised model able to predict the evolution of gases in micro-perforated equilibrium MAP, with a detailed evaluation of fluxes through the perforations by means of Computational Fluid Dynamics. It was found that the Sherwood number for the studied micro-perforations is 0.715 and it was confirmed via experiments on packaging with oxygendepleted atmospheres. The kinetic model was experimentally validated on a smear short-ripened soft cheese (Taleggio) whose complex surface microbiota confer to the product a non-trivial respiration behaviour.Cheese slices were packed with three different micro-perforated solutions (one 120 μm diameter hole, two 90 μm diameter holes, and five 90 μm diameter holes) achieving three different equilibrium gas compositions with good model predictions. The model was applied to literature data with success, thus the model can be deemed general and applicable to many different systems.
