Abstract:Carnosine is a natural bioactive dipeptide with important physiological functions widely used in food and medicine. Dipeptidase (PepD) from Serratia marcescens can catalyze the reverse hydrolytic reaction of β-alanine with Lhistidine to synthesize carnosine in the presence of Mn 2+ .
