Hyphenated Analytical Methods in Determination of Biologically Active Compounds in Hen's Eggs

Abstract: Hen's egg is a complete material needed for the development of the embryo; it is an important source of nutraceutical compounds, such as protein, fats, vitamins, trace metals, and minerals. Moreover, avian egg contains biologically active compounds that exhibit antibacterial and antimicrobial activities as well as antitumor, antiviral, antioxidant, immunomodulating, and therapeutic properties. Eggs are mostly very good sources of valuable, easily digestible proteins. This review focuses on the biologically act… Show more

“…In addition, eggs are considered nutraceuticals, i.e. natural food with health-promoting and therapeutic functions (Nain et al, 2012), and 'designer eggs' may contain several times more biologically active substances (Trziszka et al, 2013;Walczak et al, 2016). An undoubted advantage of eggs is that their composition can be modulated relatively easily, in the case of both nutrients and elements (Szymanek et al, 2019).…”

“…Earlier results gained by two-dimensional electrophoresis suggest that egg white protein abundances could differ importantly between both chicken breeds and populations. 7 Since the egg white contains large amounts of proteins involved in antimicrobial defense, 8 such variation could potentially affect egg quality, biosafety, and chicken embryo development.…”

“…Two proteins responsible for the variance between fluids are proteins from the serpin family—OVAL (ovalbumin) and OVALY (ovalbumin-related protein Y). Both proteins are also present in egg white which is predominantly composed of proteins that exhibit antimicrobial activity 75 , 76 , which was confirmed for OVAL 77 , 78 . There is also higher abundance of RBP (riboflavin-binding protein), whose precursor was already found in laying hens, where its occurrence was primarily associated with the transfer of vitamin B to the egg 79 .…”
