Hunting Quantum Gravity with Analogs: the case of High Energy Particle Physics

Abstract: In this review we collect, for the first time in one paper, old and new results and future perspectives of the research line that uses hadron production, in high-energy scattering processes, to experimentally probe fundamental questions of quantum gravity.
