“…Amino acids, as primary metabolites of the tea tree, played an important role in the formation of umami and sweet taste of tea soup (Miyauchi et al, 2014;Ye et al, 2016;Jia et al, 2018;Chen et al, 2021). Many scholars usually used tea polyphenols, theanine, amino acids and catechin components as evaluation indicators in evaluating the effect of biotic or abiotic stress on tea quality, and their high content means good quality and vice versa (Yan et al, 2020;Wen et al, 2021;Le et al, 2022;Tang et al, 2022).
