Household food waste reduction: Italian consumers’ analysis for improving food management

Abstract: Purpose Every year 1.3bn tonnes of food are lost or wasted in production, manufacture, distribution and at household level. Consumers are the biggest contributors to the total volume of food waste generated over the world. “…Their discrepancy could be attributable to a certain "positive unawareness", probably due to the fact that they consider food waste a significant waste of money. Indeed, one of the strongest motivators to reduce food waste appears to be money savings [69,70] and price consciousness [71]. Considering that the "red" cluster is made up of people who work and dedicate most of their time to professional activities-even during the lockdown, in smart working-it is likely that they know and attribute to food an economic rather than a social or an environmental value.…”

“…A lot of articles showed that consumers behavior is complex and depends on a lot of factors, as habits, emotions, social rules and norms, personal capabilities, knowledge and experiences, etc. (Williams et al, 2012;Quested et al, 2013;Farr-Wharton et al, 2014;De Hooge et al, 2017;Hebrok and Boks, 2017;Russell et al, 2017;Porat et al, 2018;Schanes et al, 2018;Pellegrini et al, 2019). One major issue is the lack of knowledge about the optimal storage conditions and the technologies used to increase shelf life of products.…”

“…The most recent research trends in this area chiefly concern analyses in the context of supply chain management, problems related to food loss, food waste management, and changes in consumer behavior and consumption behavior. Examples of this are Pellegrini et al [ 40 ], who analyze the factors affecting consumer food waste behavior at a household level, and Bhatti et al [ 41 ], who investigate the factors that affect young consumers’ food waste behavior in the context of a developing country. Importantly, the most recent research concerns analyses in the context of the circular economy (this is discussed, e.g., in the study by Loizia et al [ 42 ]).…”
