A detailed study on the degradation of iso-α-acids was conducted. Because of the complexity of the wort matrix and interfering interactions during real wort boiling, the investigation of degradation kinetics was performed in an aqueous solution. Degradation was investigated as a function of time (0-90 min), temperature (80-110°C), pH value (4-7), original gravity (10-18°P) and ion content of the water (0-500 ppm Ca 2+ and Mg 2+ ). After 90 min of boiling, over 20% of the dosed iso-α-acids could no longer be detected. A strong dependence of degradation could be shown due to high temperature, low pH, high original gravity and a high Mg 2+ content. The cis:trans ratio and co-iso-α-acid content did not change significantly. Losses of isohumulones could be lowered by reducing the temperature and original gravity, as well as by heightening the pH value. High amounts of Ca 2+ and Mg 2+ salts also led to an increase in degradation products. Solutions to decrease degradation and thereby possible improvements in sensory bitter quality are discussed.

Saaz Late -česká odrůda chmele doporučená pro České pivoKlíčová slova: chmel (Humulus lupulus L.), šlechtění chmele, α-kyseliny, chmelové silice, genom, DNA, pivovarské testy, chráněné zeměpisné označení České pivo ■ ■ 1 ÚVOD Ve šlechtění chmele lze v uplynulém desetiletí zaznamenat řadu nových trendů, z významných je možno jmenovat zakrslé odrůdy a odrůdy se specifickým aroma . Šlechtění zakrslých odrůd vhodných k pěstování v nízkých konstrukcích (Neve, 1991) bylo započato v Anglii již v 80 . letech minulého století . Velkou výhodou tohoto pěstitelského systému je podstatné snížení nákladů na výstavbu chmelnicové konstrukce a na pracovní sílu v jarním období . Původní trpasličí odrůdy se zde dnes pěstují na několika stech hektarech . Odrůdy jako např . First Gold, Herold, Pioneer či Pilgrim slouží nyní jako prvotní genetický materiál pro šlechtění tohoto typu chmelů i jinde ve světě (USA, Česká republika, Německo) .Další, v současné době velmi populární skupinou odrůd chmele jsou tzv . "flavour hops" . Jedná se o odrůdy s atraktivním, senzoricky specifickým aroma, které se v plné míře uplatňuje i v pivu díky tomu, že se používají k tzv . "chmelení za studena", přídavku chmele do ležáckých tanků ve studené fázi výroby piva . Takto chmelená piva získávají zcela jedinečnou chmelovou vůni díky tomu, že se senzoricky uplatňují látky, které běžně při chmelovaru bez užitku vytěkají z vroucí mladiny . Chemiluminescence (CL) produced in hop pellets of Saazer, Hallertau Herebrucker, Tettnanger, and Lublin was detected using the single photoelectron counting system. When the hop pellet was analyzed at 80'C, the CL intensity increased, reached a maximum, and then decreased. The CL intensity of the hop pellets increased with storage time and showed a good relationship with the loss of (ot+p) acids in the staling hop pellets. It was also thought that the deterioration rate of the hop pellets could be evaluated by observing the CL producing pattern of the fresh ones before storage. It was, therefore, expected that the CL analysis might be a useful technique for a quality check of the hop pellets.
