The present study examined the effects of the hydro-alcoholic extraction of the red seaweed Gracilaria corticata (GCE), as food additive on growth, antioxidant defence and immunity in the goldfish, Carassius auratus. Four experimental treatments in three replications were established and fed the experimental diets for 60 days. The groups were: a control (fish fed only a basal diet), GCE1: fish supplemented with 0.5 % GCE/kg diet, GCE2: fish supplemented with 1 % GCE/kg diet, GCE3: fish supplemented with 1.5 % GCE/kg diet. After feeding period, the antioxidant [superoxide dismutase (SOD), glutathione peroxidase (GPx), catalase (CAT)] and immune responses were evaluated. Dietary GCE had no effect on growth performance (P>0.01). The plasma immune responses including alternative complement (ACH50) and lysozyme activities elevated in fish supplemented with 1 % and 1.5 % GCE compared to those fed 0.5 % GCE and basal diet (P<0.01). The plasma and mucosal immunoglobulin (Ig) significantly elevated in all GCE supplemented fish (P<0.01). The plasma peroxidase activity significantly increased only in the fish receiving GCE at dietary level of 1.5 % GCE compared to control and those supplemented with 0.5 % and 1 % GCE (P<0.01). The mucosal lysozyme, protease activity and alkaline phosphatase significantly increased in fish supplemented with 1 % GCE compared to other experimental diets (P<0.01). The activity of antioxidant enzymes (SOD, CAT, GPx) showed significant increases in fish supplemented with 1 % and 1.5 % GCE (P<0.01). Furthermore, the expression of the immune-related genes, complement and lysozyme significantly elevated in the treatments of 1 % and 1.5 % GCE compared to other experimental diets (P<0.01). The results of this study revealed that the use of GCE as a food additive in the diet of goldfish diet can improve the fish immunity without negative impacts on growth.

In this study, the authors examined late atretic follicles in the ovaries of Atlantic bluefin tuna, Thunnus thynnus (Linnaeus 1758), at different times of the year using transmitted light and epifluorescence microscopy. Atresia (degeneration and resorption of developing ovarian follicles) is a natural process involved in fecundity downregulation in teleosts and is substantially enhanced in stressful conditions. Early (α and β) atretic stages of yolked oocytes have a relatively short duration in seasonally reproducing species, whereas later (γ and δ) atretic follicles (LAF) persist for longer time in the ovary, serving as a sign of previous vitellogenic activity. LAF can thus be used as reliable markers of maturity during non-reproductive periods. Lipofuscin granules accumulate in the cytoplasm of LAF cells as a result of lysosomal digestion of oocyte components. Taking advantage of the well-known autofluorescent properties of lipofuscins, LAF may be identified in unstained histological sections under fluorescence microscopy using appropriate excitation and emission wavelengths. The authors explore in this study the applicability of fluorescence microscopy to provide a fast and effective method to assess late atresia in fishes. This method may be particularly useful to determine sexual maturity in individuals sampled long after the spawning season, where LAF are difficult to detect in standard histological sections. Furthermore, LAF autofluorescence provides a rapid way to quantify late atresia in fishes using image analysis.

To study the hydrolytic and oxidative processes occurring in the lipids of the gonads (caviar and milt) of herring when stored in the freezer at a temperature of -18 °C, the dynamics of changes in acid, peroxide and thiobarbitur numbers were determined. The shelf life of frozen caviar and milt is 3 months. The technology of processed cheese with the addition of herring gonads (Baltic herring) is proposed. In order to make processed cheese with the addition of caviar and milt ideal, mathematical planning of the experiment was used, namely, an orthogonal central compositional plan of the second order for two factors: the content of caviar and the content of milt. The optimization parameters of the mathematical model are an aggregate dimensionless characteristic consisting of five particular responses: organoleptic evaluation, dynamic viscosity, yield strength and mass fraction of moisture. The technology of processed cheese enriched with caviar and herring milt is proposed. To analyze the main quality indicators, as well as to establish the shelf life of the developed processed cheese, the dynamics of changes in organoleptic, hydrolytic and oxidative processes occurring in the lipids of the salaki gonads, as well as in enriched processed cheese, were studied. The assessment was carried out by acid (KCH), peroxide (IF) and thiobarbitur (TBH) numbers.
