Histamine content and isolation of histamine-forming bacteria in fish meal and fish soluble concentrate

Abstract: Forty fish meals and five fish soluble concentrates (FSC) imported to Taiwan were sampled to determine biogenic amines and histamine-forming bacteria. Average levels of water activity (0.8), water content (39.9%), salt content (7.32%), and total volatile basic nitrogen (TVBN) (150.7 mg/100 g) in FSC samples were significantly higher than those of fish meal samples, whereas the average levels of crude fat (3.94%) and crude protein (40.7%) in FSC samples were lower than those of fish meal samples. Thirty-five (8… Show more

“…However, fishmeal stored for long periods usually contains high doses of histamine due to the decarboxylation of histidine [ 10 , 11 , 12 ]. Moreover, striped catfish are cultivated commercially in subtropical and tropical regions where unfavorable storage conditions (humidity and heat) often lead to feed spoilage and produce large amounts of histamine [ 13 ]. Therefore, striped catfish may face dietary challenges with high doses of histamine.…”

“…Fish soluble is a by-product of canned tuna processing produced from tuna-pressed liquid. It is then processed into fish soluble concentrate (FSC) which is high in protein and amino acid content, making it useful as an ingredient for aquaculture and animal feed [ 7 ].…”

“…Salmonella is able to persist for many years in dry environments such as those found in feed mills, grain stores and feed bins. Once resident, Salmonella can be difficult to eradicate [ 7 ]. Resident strains can enter feed processing equipment, including after critical control steps such as heat treatment, and may multiply in situ.…”
