Is it possible that non‐natural chemical substances become natural without changing their chemical, physical or physiological characteristics? The history of synthetic flavors with a special emphasis on vanillin suggests that yes, it is possible. This process is called naturalization and means in this case the change of status of a synthetic flavor to something natural. In this article the history of vanillin as a frequently used flavor and its transformation into a natural ingredient in the twentieth century will be presented and analyzed. Studying the particular characteristics of vanillin, it seems that known concepts in the history of science like Ersatzstoff (surrogate) or Wirkstoff (active agent) do not constitute the best fit in describing this flavoring agent. Categorizing vanillin as a Konsumstoff (commodity agent) seems more useful in order to classify its characteristics and its historical development. I suggest using Konsumstoff as a new theoretical and methodological approach to study the history of chemical substances. In this article, the concept of Konsumstoff will be outlined and developed using the vanillin case as a paradigmatic example.

The paper tackles the changes that occurred in the political culture and the episteme of risk in the Federal Republic of Germany in the 1970s. The objects of observation are limit values for hazardous industrial materials, especially for carcinogens. At the forefront of the production of such values in Germany was the German Research Society's Senate Commission for the Examination of Hazardous Industrial Materials. Limit values bring economy, politics, and science together and they mediate different interests. This makes limit values an ideal object of study to bring together changes in different parts of society. In 1972, a new category of limit values for carcinogenic substances is introduced, the so called "Technische Richtkonzentration" (TRK). This category of values does not assume that complete safety can be reached, as do limit values for hazardous industrial materials, so called "Maximale Arbeitsplatzkonzentrationen" (MAK). This means an important rupture in toxicological thinking. Until the 1970s, Paracelsus' dictum about dosage and poison still served as starting point for toxicologists. The innovation of TRK marks an important rupture in the episteme of regulating dangerous matters. Whereas until the 1970s there existed, at least as an ideal, the myth of "no risk" or "zero tolerance" even in the case of carcinogens, since the beginning of the 1970s, certainty is no more guaranteed by epistemically, but by socially robust knowledge. This also means the return of the risk society at the beginning of the 1970s, whereby cancer at the workplace becomes--in the view of the regulatory bodies--out of a medical problem a socioeconomic illness. The paper argues that these changes are connected to a general feeling of disorientation.

Produktion und Verbrauch von Nahrungsmitteln sind traditionell mit weit reichenden Ängsten verknüpft. Bezogen diese sich in vormodernen Gesellschaften vorrangig auf eine ausreichende Versorgung, sind sie in der modernen Industriegesellschaft eher auf die Qualität der Nahrungsmittel gerichtet. In diesem Zusammenhang spielten in der Nachkriegszeit Antibiotika eine zentrale Rolle. Der Aufsatz stellt die Einführung der Antibiotika in die westdeutsche Food has always been connected with anxieties. Whereas in pre-modern times, people mainly struggled with the provision of enough food, in the late modern period the focus shifted to the quality of food. Due to the successes of modern agriculture and trade, Western countries no longer face the problem of food shortages and undernutrition, but are instead confronted with the problem of over-abundance and health-related problems like obesity (Scholliers 2008, Bruegel/Stanziani 2004, Fischler 2002. Even though people in industrialized countries expect to be able to buy as much food as they want, they are anxious about the purity of their foods, as illustrated by the increasing popularity of organic foods and the role of food scandals in the media. Many of the recent anxieties relate to contamination by poisonous substances or pharmaceuticals, and most are closely linked to the alienation of food production and consumption that has resulted from the processes of industrialization and
