Background: From past few years food safety has emerged as public health issue and has diverted attention of researchers towards health hazard associated with food contamination. Food contamination is a major concern of street food industry serving as a source of food to people. Tomato ketchup is consumed by all age groups along numerous products, sold by street vendors. Tomatoes are preserved in the form of ketchups.Methodology: A total of 12 samples were collected, 3 each from Delhi, Noida, Gurugram, Faridabad respectively. The procured samples were then analysed for the presence of heavy metals lead and cadmium using Atomic Absorption Spectrophotometer (AAS). Result:The mean concentration of cadmium in all samples was Below Detectable Limit (BDL).Whereas, mean concentration of lead was highest in the regions of Delhi i.e., 0.183ppm followed by regions of Noida (0.096ppm), Faridabad (0.089ppm) and Gurugram (0.031 ppm). Conclusion:The cadmium concentration in samples were below permissible limit whereas mean concentration of samples in region of Delhi, Faridabad and Noida exceeded the levels set by WHO/ FAO joint committee. So, excess or prolong consumption may cause toxicity or health hazards.

Heavy metals are chemical elements with a toxic effect on the human body. The expansion of industries has led to significant increasing levels of these constituents in the environment. Intensive agriculture can also lead to an increased concentration of heavy metals as a result of using different fertilizers and pesticides. Heavy metal accumulation in soil and plants represents a serious issue because of the potential risks to consumers. There are several methods available for the removal of these toxic components from different substrates (chemical precipitation, electrodialysis, coagulation and flocculation, photocatalytic removal, and adsorption-based processes), but most procedures are expensive and difficult to perform. Thus, more research is needed on the development of low-cost methods in foods. This work represents a review on the heavy metal presence in different food substrates (such as fruits and vegetables, milk and dairy products, meat and meat derivatives, oils, and alcoholic beverages) and provides an overview of the current situation worldwide, taking into account the fact that risks for human health are induced by the intensification of industry and the high degree of pollution. Considering that the toxicological quality of food affects its acceptability, this work provides valuable data regarding the actual situation on the proposed topic.

This study provides valuable information on the levels of various trace metals (Pb, Cd, Hg, Zn, Cu, Cr) in meat products (baked ham, raw ham, mortadella, cured sausage, würstel, salami) from South Italy and calculates potential health risk toxicity associated with their consumption for the total population and for children. In the samples studied metal concentrations are within the permissible legal limits (Cd: 0.01–0.03 μg g−1 w.w., Hg: 0.01–0.02 μg g−1 w.w., Zn: 5.71–7.32 μg g−1 w.w., Cu: 1.08–1.21 μg g−1 w.w., Cr: 0.15–0.23 μg g−1 w.w.), except for Pb (Pb: 0.22–0.38 μg g−1 w.w.). The estimated intake values are within the provisional tolerable daily intake limits for toxic metals and recommended daily intake values for essential metals in both tested groups. The noncarcinogenic risk values of the individual metals indicate that there is no health risk, but their combined effects might constitute a potential risk for children. Furthermore, the cumulative cancer risk of all samples studied exceeds the recommended threshold risk limit (> 10−4) in both total population and children, indicating a risk of potential health problems for consumers especially for children, who are more vulnerable to toxic metal exposure.
